Q: is the XLR mic line input stereo or mono?

All XLR connections with 3 pins are Mono. You have a positive, negative, and a shielded ground wires. the Instrument input will most likely be an unshielded mono input with just a positive and negative ring.

Q: Does this work with FL Studio?

Yes the source is sometimes called "Line-In Audio"

I returned mine because I realized that I needed a 2 XLR connection so I didn't keep it too long - sorry.
