The cajon came with strings taped down and velcro exposed. Is the tape supposed to stay on or come off?

Yes you can remove them for a more pronounced snare sound. The tapes are there to suppress the snare.

Does it come assembled?

Yes. It came fully assembled and included the correct size allen key.

can you sit on it? (175lbs.)

Yes. I gave it to my nephew, who isn't quite (175lbs) but he had no trouble sitting on it. It seemed like very good quality product (from what I could tell).
