The difference between cold pressed and cold extracted is that the cold pressed olive oil is obtained from the mechanical pressing of the olive paste by a traditional extraction system using hydraulic presses. ‘Cold extracted’, on the other hand, refers to extra virgin olive oil obtained by centrifugation of the olive paste. Most olive oils nowadays is cold extracted as the traditional method is a very slow process.

Unfortunately our olive oil is not organic. We produce it in our own olive mill in Kalamata, Greece and now you can buy the new harvest of November 2019.
