So far, all I know is that it is extremely sharp and perfect for smoked ham.I don't know how the sharpness will hold up, but I see no reason it wouldn't.I am not familiar with $100+ knives, but for the amount I paid for this, it is very worth it.

Nice ham knife
Knife works great. Just be careful, its extremely sharp, works well on prosciutto. It is flexible, I think it would also make a good fish knife. Much better and more affordable than a deli slicer I purchased and sent back since it couldn't really do thin slices and was very uneven. This knife was less than half the price and performs better with a little practice.

Good cut, bends a bit
A bit bendy, but it's sharp and feels good in your hand. Cuts through prosciutto nicely.

High Quality, Good Value
It may sound silly, but you really do need a special knife to slice Jamon (spanish cured ham). This knife works perfectly. This is my second as I gave my first to my cousin who marveled at how well it worked. This knife will work for any slicing job where you need very thin output. I make my own Gravlox and this slices beautiful thin slices every time.

I had purchased a whole Smithfield specialty ham which required thin slicing for best flavor. The knives that I had were sharp enough but didn't allow the flexibility required for really thin slicing. What I desired was a reasonably priced blade like the ones in Spain used to slice Jamon Serrano. I came across the Arcos Regia knife and the price point, quality and suitability for the task all came together. I highly recommend it for those, like myself, that want a budget blade that facilitates thin slicing of ham or salmon.

The best knife for cutting up an entire Parma Ham!
Bought this knife to cut up a Parma ham I purchased for the holidays. It made ease work of the ham. I thought it would be a struggle, but the knife is very sharp and very durable.

Very important to have a knife like this for slicing jamon!
Getting the proper knife along with our first leg of jamon was essential. You need the fineness of this blade and the flexibility it affords at the angles for slicing paper thin cuts off of a cured jamon leg. This knife is very lightweight, the 10" inch size worked perfectly. Most reviews were for the 12", but I opted for the smaller. The handle is beautifully forged with brass. And it is of course made in Spain! A knife everyone should have!
