Excellent pan, great heat retention, heavy.
Solid like a rock. No rivets to clean because it's so well made. The little handle opposite the 'main' handle comes in really handy since it's so heavy. I'm fairly new to SS cooking, and we had a 'TV personality" brand pan which I practiced on that was just OK with heat retention. With this Demeyer, it's so good with heat retention, after I put the oil into the hot pan (which is after it passes the heated-up test with the rolling balls of water), I put my scrambled eggs in, and I immediately turn off the heat, and it has plenty of heat retention to fully cook the eggs. The only minor inconvenience is that it's definitely heavy to pick up when you pour or scoop out the eggs, or whatever food you have. Also, because it's 7-clad, it does take longer than most to heat this thing up! I usually turn it on medium, and really take my time getting all of my ingredients ready. This morning I put it on the heat, went outside to feed the grackles and clean their bird baths, came in, mixed the eggs, and it was heated up well. It's super easy to clean if you cook it properly. Every few cooks, I use the liquid bar keepers friend, which does a fantastic job of cleaning, yet won't damage the finish. Mine arrived with the packaging torn apart and just thrown into the box, so I don't know what happened. Luckily it didn't appear to be used, but I got a really good price so I didn't return it. Shipping was super fast.

High quality Made in Belgium goodness
We have a good mix set of Atlantis/7ply series Demeyre pots and pans that purchased 4 years ago. They still look new. They all retain heat so well with next to no cold spots. They were expensive but they will not only last my life time but my kids and there kids. No complaints after 4 years of daily use. They are little heavy but that’s due to 7ply but much lighter than cast iron griddle we have. We cook eggs etc in these all the time with no food sticking if you pre heat the pan first on medium heat for few mins and pour a drop or two of water droplet to see if it dances around the pan (ready to cook) or evaporates (not ready so let it heat more). Nothing sticks on our Demeyre pans.

Specs to help determine if it is too big for you
First, the pan is high quality and feels really solid. In our first cooking test, it took a bit longer to heat up, but the heat distribution was very good and the pan held the heat (a bit like cast iron). It is also big and quite heavy - especially when trying to maneuver it with the long handle. Here are some specifications that are not in the listing that can help you decide if this pan is right for you (see attached images of packaging). Model = 25632 Diameter at lip = 12.6" (32 cm) Diameter at base = 10.2" (26 cm) Minimum cooking ring diameter = 8.7" (22 cm) 100% dishwasher safe (sealed edges) At 12.5 inches in diameter, this pan is larger than any other pan in my kitchen. It will work well for very large meals, but will probably be too big for most meals. Be sure to measure your cooking ring diameter. The packaging states the minimum cooking ring diameter is 8.7" for this pan (7.1" for the 11" sized equivalent pan). Also, these pans do not come with lids (at least not in the USA). Demeyere makes glass lids for their fry pans. The 12.5 inch lid is Demeyere part number 6532 in case you need this accessory. If we had known these specifications, we would have purchased the 11" sized equivalent pan (model 25628), but are keeping the 12.5" for when the kids all come home for a big meal.

The last and only skillets you'll need
I have both the 9.4 and the 11 inch pans. They have replaced my cast iron and carbon steel pans. These pans have enough thermal mass, almost 4mm of aluminum, to sear as well as the other materials while heating up much more quickly and evenly. That's significantly more aluminum that you'll find in any other clad pan, enough to perform almost like copper cookware, while having much better heat retention. If you don't know how to cook with stainless steel to minimize sticking, search YouTube for videos, there are many. I am even weaning myself off non-stick pans by learning how to cook correctly with SS. The proprietary Silvinox surface treatment makes his cookware much easier to clean than cheaper SS pans. The handles are secure, stay cool, and are comfortable. I own some All Clad which are good, but their handle put in mind of walking on gravel barefoot sometimes. Yes, they're heavy but quality cookware has to be heavy. Demeyere products work well on both my induction and gas cooktops. Unlike my fancy French brand carbon steel pans, these stay flat on induction burners and give me the best browning and temperature control I have ever experienced. I also own a Demeyere Atlantis saucier and can recommend that also. I have even given one as a gift. Demeyere is an investment, but you'll use them so long and cook so many great meals, you'll forget all about the cost.

Great pan. Super big and heavy!
This is a great pan if you like to cook larger meals. I just have a family of 4, but I still found myself frustrated by not having enough space in my 9” pan to sauté veggies, make a pan pizza, etc. this pan has plenty of space! It is very big, and necessitated rearranging our pots and pans cabinet to fit it. It’s also very heavy. I cannot carefully drain liquids from it with solid ingredients staying in the pan alone. I debated buying this pan for weeks as it is expensive, but it’s worth the cost and will last forever!

Shipping package could be better
I would have given this 5 if the box it came in had been in better shape. Pan is in great shape, no scratches or dents. However, the handle can easily poke through shipping box. For the money Demeyre charges for their products, a box should not be an issue! Otherwise, great product.

Massive sauté pan almost big enough to be a griddle.
The best part about this entire line of pans is that they don't have that annoying rivet that food gets caked around on the inside of the pan, this line is completely smooth welded. This pan cooks better than any pan that I have ever used. This thing is so massive that it can cook porterhouse steaks from stovetop to oven, by the time my first steak is done resting this thing has already cooked another. It is very heavy and very large so I'm really glad it has that helper handle or I wouldn't be able to hold it for very long with food inside, but it is still lighter than my cast iron. I actually like the weight of it because as I cook with on my stove it doesn't slide around when I'm scraping up the fond. This is almost as large as my plancha pan and ensures that I can cook anything from a full size x-large quesadillas to a steak & egg breakfast combo all in one pan.

Unmistakable Quality
I purchased the 9" pan recently and just had the opportunity to put it to use searing some scallops. The pan is very solid and hefty for its size. Not heavy, but you can tell it's a layered pan and dense. I was quite pleased with the results and am happy with my purchase on initial review. Quality build, even heat distribution, good hand feel, all around good kitchen tool! Oh, and no rivets is gonna be awesome for keeping it clean. Would recommend. May add to review down the road when I've got more use out of it.
