The perfect Non-Stick surface/coating
The 3 most important things to consider when buying non-stick pans: non-stick coating, non-stick coating, & the non-stick coating!This pan has one of the best Non-Stick surfaces/coating available.What makes this Non-Stick surface/coating better?1. High heat capable: up to 500 Degrees (most non-stick Coatings/pans are only 400 degrees).If you overheat the pan (which is easy to do) the surface will be damaged, bubble, melt and/or peel.When searing/cooking food, you sear the food on the Burner, & finish cooking it in the oven.The 500 Degree capability is perfect for this.2. This non-stick coating is very strong & durable, resist scratching, and last a very long time.I have used my “T-fal Heatmaster Fry Pan, 10-Inch”, for about 5 years (using it almost everyday) it looks almost like new & performs like new (great).I never pay more than $30 for a nonstick pan, because I know (based on experience) non-stick coatings/pans will wear-out after 2 or 3 years of heavy use (except T-fal Heatmaster & Scanpan, which are very long lasting).I am a chef, so I have a lot of experience, and I put a lot of mileage on my non-stick pans (at home).Pros:High heat 500 Degrees,Extremely durable surface (long lasting)Induction capable,Stainless steel disc (in bottom) eliminates warping,Thick aluminum for equal heating,All metal handle (oven capable)With this pan you can build up a “Fond” (when searing at higher heat) and then create a pan sauce (not possible most non-stick/Teflon type pans).Cons: NoneTriangle pan: stainless steel disc could be a little biggerRating the non-stick capabilities (only, not durability or heat, etc) on a scale of 1 to 10 (10 being the best):7 - Ceramic coatings, & Scanpan,8 - T-fal Heatmaster,9 - Most Teflon (PTFE) pans,10 - Great new coatings (Teflon style, etc) pans (T-fal Natura Titanium, OXO Good Grips Non-Stick)The T-fal Heatmaster is not the most “non-stick”, but its non-stick capabilities are more than adequate. I use a little spray oil, olive oil, Grapeseed oil, butter, etc… and eggs never stick.You give up a small amount of “non-stick”, for high heat & durability.Triangle Pan:This is a great shape for a Sauté Pan! Great design!The main advantage is: you can easily poor the food out of the pan & into a bowl and/or plate, without spilling (great).Triangle Pan has tall sides (deep) and has a very large capacity.I use this as a Pasta Pan.I boil the pasta in a large stock pot. Remarkable
Unsure about the textured non stick coating I took a chance since Amazon now has free returns on most anything. The heat spot gimmick means nothing to me I know how to fry in a pan without a visual aid. I admit I haven't done all the usual dumb demonstrations they do on late night infomercials but I have cooked everything that normally REQUIRES cooking spray without it and it's amazing. I use butter when grilling sandwiches and cooking omelets/eggs, who doesn't? Olive oil when sauteing veggies, shrimp etc. who doesn't? But it's not to keep from sticking. Every pan I've had before stuck in spite of it. Toss a burger in there with nothing and it's as good or better than a steak house burger. Thick enough to retain heat well. I always hand wash my cooking pans and this wipes down and brush washes in seconds. Wary of quality from the low price but it is a WIN WIN! Aside from cast iron this is my first non cast iron pan to go from cook top to oven too so it's just amazing! I just wish it came with a glass lid but one of my pot lids is close enough. Highly recommended. Can we get a lid with these please???

Still Requires Non-Stick Spray
I'm not a chef, in fact my only prior experience with a non-stick pan was with my more-than-30-year-old Teflon-coated frying pan that had more exposed aluminum than Teflon, hence the replacement.I only use this pan for cooking eggs, so I can't speak to it's non-stick qualities with anything else, but I seasoned it according to the instructions and I still have to use non-stick cooking spray in order to prevent my over-easy eggs from looking like they've been though a rough time. However, with a little spray of non-stick cooking spray, this pan does a great job, and it's very easy to wipe clean with a paper towel after use. It is possible to scramble eggs without using non-stick cooking spray, but the eggs still seem to stick a little. I say, expect to use non-stick cooking spray, and this pan should do well with anything you cook in it.The handle is a hollow tube of metal, and does warm up during the time it takes to cook a few eggs, but doesn't get hot enough to be an issue except right up at the point where it attaches to the pan.The rivets that attach the handle to the pan do protrude into the cooking surface, which is why I didn't give this pan five stars.Overall, I'm very happy with this pan, and wouldn't hesitate to buy it again.

Battle tested!!!
I wanted to wait a bit to add a review, because I have had similar pans fail after a period of time...Bought this pan for myself at Christmas, it's now after Easter & all is well!! Now, I do not at all condone or recommend you treat your pans like I do, but I'm a rebel & a rule breaker, so finding a non-stick that stands up to my abuse, is a real gem!! At this price point, I usually consider the pans pretty close to disposables & don't get caught up in following the "nonstick rulebook"...I heat a dry pan to searing hot & then toss cold food on it (thermal shock), I cook with strong acids: vinegars, wines, lemon, etc. I salt & season without regard to the pans finish. I occasionally leave the dirty pan sitting with cooking residues in it overnight....the only nonstick rule I almost always adhere to is no metal utensils...and this one is actually metal utensil safe!!! This pan has taken my abuse & is nearly the same as the day I received it...the cooking surface has developed a very slight (almost non-existent) convex shape, but the coating is still 100% and the tiny misshaping is almost certainly due to me thermal shocking it quite a few times...Love the pan & will definitely be adding more of this company's product to my arsenal!!! If it can take the beating I put on them, it's sure to last a lifetime for someone who takes loving care of it!!!
