Great question, some Scoby sink and some swim. Have no worries if the Scoby sinks. The important thing is that a new Scoby forms on top your brew. You should see a new Scoby starting to form within 3-4 days.

Q: Can this be used to make acv?

Unfortunately, this can not be used to make ACV (Apple Cider Vinegar).

Q: Is this just the scoby w/o the 10% mature tea that's needed? Video looks like hardly any of the tea so for 1st time need that tea.

Yes its just the Scoby with a very small amount of liquid. We made a starter tea and placed the scoby in it. It grew and we are about to use it for our first batch
