I had been looking for a rondeau style pot for a while. My kitchen is small with limited cabinet space, so finding cookware that can multi-task is a must. I have to say, this really is a beautiful pan – listed as a ‘6.5 Quart Casserole/Large Braiser’, it has 2 riveted handles, a mirrored stainless-steel finish that is magnetic (so it also works with Induction cooktops), an all tri-ply clad construction with an aluminum core for even heat distribution and a ceramic non-stick coating for easy clean up. It also comes with a stainless-steel lid that is oven safe. The instructions advise you to wash, then season the pan prior to using it the first time. It’s a simple task that took only a few minutes; I did want to ensure the best longevity for the ceramic non-stick coating. The first dish I made required sautéing sausage in a mirepoix, then adding the rest of the ingredients for a stew. The pan’s base is about 11” across which is exactly the size of my largest heating element and keeping the setting in the mid-range, then down to simmer seemed to produce even heating throughout the cook. I will say that I’m used to glass lids on my cookware, so I did lift the lid more frequently to check on progress. However, it maintained a light simmer on the lowest setting and, as would be expected of non-stick, clean up was a cinch! As a test of the ceramic non-stick, I ‘fried’ an egg in the pan – with absolutely no oil, butter or water. Just heated the pan over med-low, poured in the egg and waited. As it cooked, you could see the edges slightly curve upward; I have included the video so you can see that when I went to use a spatula, it wasn’t needed – the egg just slid right out of the pan! Overall, I’m really liking this pan! Just a few things to keep in mind, (most are just common sense): 1) use only nylon or wood utensils to protect the ceramic non-stick finish. 2) ceramic is one of the safest in the non-stick class of cookware as it avoids both PTFE and PFOA, however most caution not to exceed 350-400 degrees in the oven and to keep the cooktop heating element at low to medium heat to prevent potential degrading of the non-stick cooking surface. Obviously, these are not the pans to use for blackening or searing. 3) The mirror finish is elegant – I mean, it’s flat out gorgeous – BUT, it can also show the slightest smudges or fingerprints! A damp tea towel is an easy touch up, even when cooking, but just be aware with extreme beauty does come an extra dose of maintenance. 4) The lid is solid, which is great since it gives a good seal and is oven safe, however you have no visual of what’s going on in there during the cook (unless you peek!). 5) Lastly, the handles are stainless steel – they can get hot, so keep that in mind if and when you do decide to take that “peek” inside! This is a versatile pan at a great price point that looks beautiful on your counter as well as on your cooktop. I do find myself reaching for it as it’s size, ease of use and clean up check all the boxes! Mangia Bene!

This review is for Tramontina Utsava Tri-Ply Clad Stainless Steel 6.5-Quart Casserole with Lid and Ceramic Non Stick Interior This is the one! I have been looking for the right size pan for my needs, and I came across this one. I haven't experienced any Tramontina cookware, so I was a bit hesitant to try it. I am so pleased with the quality of this casserole. It's a good weight, enough heft to be solid and giving the right heat distribution. It is well constructed. It's also absolutely gorgeous. I have prepared stews, pastas, braised meats and eggs in this pan. It works well with no issues at all. The use instructions included with the pan tell you how to season the casserole, and I did follow those instructions to extend the life of the pan. I also hand wash the pan and lid. It's super easy to do since nothing really sticks at all to it. This isn't a pan you can use metal cooking tools with and it's not intended to use with high heat. I don't have a problem with this. Medium heat did a great job of braising any meats I've cooked in this pan so far. The size is perfect for me to prepare a meal for a family of five with no issues. It's a nice deep pan that fits nicely on my stove top. It's a very good value for the very, very good quality of the casserole.
