Very multi purpose
I use this after making into a paste in my coffee and tea to prevent stomach ulcers from hurting. I also use it as Avery easy thickener in gravy, soup etc.

Excellent
Excellent product and swift delivery. Kuzu is a brilliant ingredient for Oriental-style dishes when you want to make a clear glaze sauce from the juices at the bottom of the wok when you do a stir fry. As a macrobiotic lung tonic it's also medicine for healing colds before they fully take hold - a teaspoon in a cup with grated ginger, hot water and tamari soy sauce makes a savoury broth / tea to treat your colds. Better than echinacea or Vit C tablets. Always dissolve it in a little cold water first or it turns into lumpy gloop!

Works, but at a price
I bought this as a grain-free thickener for stews and curries. Corn starch is fine for gluten-free, but it's not GRAIN free -- so it's not ideal if you're doing Paleo. I'd never heard of Kuzu before, so this was somewhat experimental. It turned out to be a pretty good choice.On the plus side, it actually does thicken up sauces, and without altering the flavour (at least with strong dishes; haven't tried it with 'plainer' sauces). It requires a little more than the equivalent amount of corn starch, but it works. It comes in 'crystals' rather than a powder (see the attached pic), but these easily dissolve in water just the same.The only downside is the price. This is at least 5-7x more expensive than corn starch, and you'll need to use more. If getting this for the grain-free element, you're probably used to paying the 'Paleo tax' anyway, and this will last for a good few meals. But still -- a pretty hefty price for something as routine as thickening up a stew!

Does what it says. Remarkable stuff.We bought it to make vegetarian marshmallows. No success but it makes a great sweet stir fry thickener...
