Great for GF baking
I've been experimenting with gluten-free baking for a while now, and xanthan gum is absolutely essential. It's the magic ingredient that helps mimic the elasticity and binding power of gluten. It really does make a difference. Without it, your baked goods can turn out crumbly and dry. With it, you get a much better texture. It's the key to getting that "normal" bread texture that is so illusive in gluten free baking. This was a good powder, no clumps. I like the easy to open and seal container.

Saved my dinner tonight!!!
I've been wanting to get Xanthan Gum for awhile now to help keep my homemade ice cream soft, so when I saw this I just had to have it.I finally got around to using it today, however, it wasn't for ice cream. Instead, I was making my white wine lemon cream sauce for a chicken roast. While adding the butter to the sauce I ended up adding the butter too quickly and the butter ended up not emulsifying and it looked like a oily mess. I tried vigorously whisking and even a couple pulses with my immersion blender and it STILL ended up splitting. That's when I remembered I had this Xanthan Gum! I added probably about 1/4 tsp to my sauce, gave it a good whisking and VOILA! It came together and STAYED together! It even gave me sauce a nice velvety texture, similar to the effects of gelatin. (SEE PICS FOR BEFORE AND AFTER)Also, this container is pretty big and with how Xanthan Gum is normally used (1/4 tsp or less typically) it'll last me a LONG LONG LONG time.So far I've got nothing but good things to say about this product, very very happy! Maybe now I'll be able to keep my bearnaise and hollindaise sauces from splitting too! 😆

Versitile
Incredible thickener at a decent price, I use this in EVERYTHING because it's so incredibly versatile and blends in really well. I originally got this to make some gluten free bread but due to eggs being so much it's been used in any product I used to use eggs in. Goes great with aquafaba as an egg replacement!

easy to use
Xanthan gum is a great all purpose thickener and especially useful when you need to cook gluten-free. This does exactly as it's supposed to when you need to thicken things like soups and gravies.
