Knife does the job.
I am not skill in filleting fish. This is the second knife I have purchased. The one thing I am not keep on with this knife is the finger guard gets in the ways when you remove the skin. That the reason 4 stars

An ideal kitchen mate.
Whilst not as flexible as I had hoped it is, nevertheless an excellent knife. Very good quality steel and a very ergonomically designed handle. Getting an edge is quick and easy and seems to maintain its edge. Victorinox is a good quality make at an affordable price.

Filleting became easy
I use it mainly for steak cuts but recently managed to skin salmon quite easily. Victorinox is a great company and the product won't disappoint you
