Do NOT let it stand, and allow the food to adhere to it. otherwise, you will have to fill it with hot soapy water, and let it sit for a few hours.

The surface size is 6-7/8" that touches the burner, then it goes out to 7-5/8" wide if you need that too. P.S it is the best little pan I have ever owned. We us it all the time and so easy to clean.
