First time I tried I was impressed on how it absorbs the flavors of sauces, but was a little off-put by the crunchy texture. It had a mouthfeel of bean sprouts. Not unpleasant, but not what I expected. Then I checked online and learned that you can mix about a 1/4 cup of lemon juice and a teaspoon of baking soda then marinate these noodles in that mixture. They soften up nicely in about 5 minutes, like the glass noodles in Korean restaurants. Just remember to rinse them again before eating as the lemon/soda mixture is tart and will continue trying to dissolve the noodles.

I’m really not sure why people rave over this noodle; sure it is very low calorie, carbs, and high in phytonutrients, but you still have to like eating them, which I simply don’t. I’m an excellent cook and I’ll concede that they have great texture, but zero flavor, even adding sauces wasn’t enough to overcome the essential blandness. I had no trouble preparing them, they came out as they should, but it was like chomping on celery but with whole a lot less flavor. Glass noodles made from mung beans taste much better. No thanks, there are far tastier ways to enjoy a healthy meal. Now, what to do with the three other bags sitting in my fridge??

These kelp noodles are excellent! Just what I anticipated. Soaked for about 5 minutes and was able to make a delicious raw ramen meal!. I'll be ordering again.
