Q: The bag clearly reads "Bleached" but the description states Unbleached. What gives?

You still need yeast, but all-purpose is better. As self rising already makes cookies, cakes, etc. rise. When you use yeast and self rising flour it can be too much and can have an opposite affect(not enough rising). I use self rising for quick breads, biscuits, easy donuts and such. Hope this helps
