Awesome slicer
This knife is the bomb. Super sharp. Smooth cuts. Much better than electric knife. Slices meats like butter. Best knife ever, only wish I’d have bought on sooner.

I was hesitant, but it cut brisket SO MUCH BETTER than my previous knife!
A granton-edge knife is a granton-edge knife, right? That's what I thought when I bought my first one 4 years ago for $15. And it was a decent knife. It cut way better than what I was using before.But a few weeks ago, I saw a worker at a restaurant cutting brisket perfectly and VERY thin. I wasn't able to do that with my old knife. I looked closely at what he was using. It was granton-edge. It wasn't serrated. It was longer than my old one. I couldn't see any other difference. I just knew mine didn't work that nicely and never had.So I searched to try to find a better brisket knife. Prices are all over the board. Some incredibly expensive. I'm way too cheap for that.This one seemed a good balance. 3" longer than my old one. Not the cheapest, but reasonably priced. Excellent reviews, including several that mentioned brisket. And it was Father's Day, so I gave myself a gift.I smoked two briskets today, so I finally got to test it out. It cut BEAUTIFULLY! Part of the point was a little overcooked. My old knife would have shredded it. This cut right through it like butter. I was able to cut very thin slices. The longer length made it easier to cut.I spent more than twice as much on this knife as I did on my previous one. But it's worth every penny.I'm anxious to see how well it holds up over time.

Great knife! Wish I'd bought one with a sheath
I ordered this without much thought and when I received it, I was surprised at two things. 1. This thing is LONG. It's like a small machete! 2. I should have made note that there is no sheath. I would definitely look for one with a sheath if I had a do over. Did a great job with our brisket though!

Hard to clean
A great slicer if you find yourself with difficult cuts of beef or fish. I personally use it for slicing brisket, and getting thin sliced cured salmon. The little divots in the blade from the granton edge make it difficult to clean

LOVE THIS KNIFE
It is really sharp. very stable in your hand. Really good for carving your meats. I also used it to cut bread and a cheesecake. Can't find enough excuses to use it. Will recommend it!

Always the sharpest
I have many Mercer knives, from different lines. It doesn't matter if you get the lower Millenia line or go higher, the blades come out of the package sharper than any other brand I've owned. And the steel holds its edge excellently. These knoves are worth more than you pay.

Glides through brisket with ease, providing a clean cut
After reading about the benefits of a "Granton edge" in a BBQ blog, and cooking up my first brisket, I decided to spring for this l-o-n-g slicing knife. Although I have other knives that are quite capable of slicing, they lacked the "divots" that are a key feature of Granton-type knives. This feature reduces the tendency for food to stick (friction) when slicing. With a 15 degree edge, this high-carbon Japanese steel knife is also super sharp right out of the box, and remained so after first use; I hope to provide an update on how the edge holds after more extensive use.[Review: 25 May 2024]
