Sharpnesses
I owned other Japanese knives, this one is the sharpest one. Loving it.

Great knife for the price!
Not only was it a great price, it looks and feels great. Haven’t had any problems even slicing tomatoes.

This knife was a challenge to assess. Very very sharp. Very pretty, well presented, modest price.
So this is a very VERY sharp, very light weight chef's knife.I have dithered a bit over how to rate this, but ended up giving it 5 stars, b/c it is so well executed for the money. It appears to be set at 10 degrees, like a Shun paring knife I also have, and is about as wickedly sharp. There is no information about sharpening (Don't: I presume, it's stainless steel?) provided. The blade is fairly thin, and much lighter than the other two german chef knives I use.(See attached pictures comparing them.)My concerns have to do with the lightness itself - I wouldn't feel comfortable using this on anything that requires a good bit of knife pressure (pizza?), as it could possibly bend with too much pressure applied. The heavy (and now quite old - more than 30 years!) Wusthoff knife is still my favorite - it sharpens easily, and can take on almost as sharp an edge, and can cut through bones or thick pizza quite safely. But, except for that latter task, the Paudin is more nimble, and a bit sharper, and is my new #2 preference. Time will tell if it holds up.I included a comparison to the Shun paring knife, which has a similar blade angle, but feels more stable in the hand (and is smaller, and has a triangular shaped handle). The Shun is similarly wicked sharp, but is also fairly old and had not (yet) needed any re-sharpening (I only use it for fruit and veggies.)The Shun is easily my all over favorite knife, but NOT cheap! There is nothing to indicate that the Paudin is similar constructed of layers of folded steel - so the appearance must be just that, appearance, and etched on?I wanted to knock one star off for this, but decided that the lower price point offsets that...I could argue either way. Only time will tell. The Paudin handle is quite comfortable, and the lighter weight makes it preferrable for some lighter duty tasks. The presentation case is nice, though a little short on technical information or 'care and feeding' (ie, sharpening) instructions. It arrives in an interesting heavy plastic sleeve, but it's also a bit tricky to put it fully, and safely, inside it - it would be easy to leave a 1/4" of sharp edge exposed at the heel, by accident...so move to a knife block as soon as possible. But none of the other knives came with knife holders, either, so I guess that's better than 'nothing'.So, while I remain a bit leery of the 'bendy' potential, I think - so far - that it's really a quite nice knife, and will replace the Henckels as my #2 favorite chef's knife....especially for the modest cost.Well done.

Really well made, not real Damascus
The fit and finish on this chef knife is actually nicer than I was expecting for the price. It comes with a hard plastic blade guard which I really like too.Edge has a nice sharpness, although i’ll fine tune it a bit with my whetstone.Knife has a great balance, and feels comfy in the hand. No sharp edges on the handle. And the wood looks great. My only pet peeve, and what’s keeping me from leaving 5 stars, is the fake Damascus. The knife is really decent quality. It’s a shame that there’s a fake Damascus finish. It cheapens it in my opinion. If it were real Damascus, it would be incredible at this price point. But sadly, it’s not.Overall, I think this knife is a great value. As long as you can get past the fake Damascus pattern. Who knows.. maybe you like the way it looks 🤷🏼♂️.
