Great knife to use it a professional kitchen. The global range is a great range and I have never had a problem with them. Highly recommend to ahy cgef out there who is not keen on wooden handles. Very sharp with a comfortable balance. Definitely would buy again if needed.

I haven't tried but I would not be surprised if you could shave with this knife; it is that sharp. Global knives are not cheap but I cannot believe you can buy a better knife at any price; try and please let me know if you can prove me wrong.

Un couteau tranchant comme une lame de rasoir (il passe au la main le teste de la feuille de papier), aucun problème de finition, et un entretien simple. Concernant ce modèle, inspiré du Nakiri japonais, il permet en effet de couper rapidement les légumes (du fait de son tranchant et de la hauteur de la lame), tout en permettant des tranches beaucoup plus fines qu'avec un hachoir chinois, du fait de la finesse de la lame. Attention cependant à ne pas l'utiliser pour couper une viande avec des os, il n'est pas fait pour ça.

...ein perfektes Messer! Als Betriebsleiter in einem groà en Gastronomiebetrieb lege ich nicht nur im Beruf sondern auch im Privatem wert auf ein ausgewogenes VerhÃ'ltnis von QualitÃ't und Preis. Nachdem unsere Köche unbedingt Global Messer fÃ'r den Betrieb nutzen wollten und diese dann auch bekamen, konnte ich mich bereits dort vpn der ausserordentlichen QualitÃ't und Langlebigkeit der Messer Ã'berzeugen. Sie sind nun im Betrieb seit 2 Jahren im Dauerbetrieb und funktionieren immer noch Einwandfrei. (Man muss hier natÃ'rlich hinzufÃ'gen: funktionieren einwandfrei, weil sie ordentlich gepflegt werden, d.h. regelmÃ'à ig geschliffen, nie in die SpÃ'lmaschine..usw.) Auf Grund dieser Erfahrung nutze ich die Messer nun auch privat und sie Ã'berzeugen. Neben dem G-5 habe ich privat noch das G-2 und GSF-15. Sie liegen auf Grund der Gewichtsverteilung perfekt in der Hand und schneiden wirklich sehr, sehr gut. Dies fÃ'hrt jedoch zu einer Warnung meinerseits an unerfahrene Hobbyköche. Die Messer sind Profimesser, sie sind wirklich sehr scharf. Wer also nicht weià , wie er sach- und fachgerecht mit so einem Messer umgehen kann und muss, sollte eher zu einem anderen Messerfabrikat greifen. Evtl. Zwilling mit breiterem Schaft und Klinge. Man kann sich wirklich sehr schnell mit diesem Messer schneiden und das endet auf Grund der SchÃ'rfe mehr als unangenehm. Zu dem oben genannten Punkt QualitÃ't-PreisverhÃ'ltnis: Wenn ich das Messer mit anderen Messern namhaften Messerproduzenten vergleiche, ist das Preis-QualitÃ'tsverhÃ'ltnis hier mehr als gut. Mehr muss man dazu gar nicht sagen!

I have had all of the favorite kitchen knives over the years, old German carbon steal, new German stainless, and even a few rather nice Japanese Nakiri knives of the same price as the Global. Really, I feel like my life in the kitchen has been wasted all of those years since I brought this knife into my life. It is the only knife I use now. It's ergonomics allow for the finest garlic to boning out a chicken, and everything in between. It makes prepping feel like sculpting, and never a chore just to get food on the table after a long day at work. The edge keeps beautifully, the balance and weight is perfect, and tall blade almost gives it a cleaver feel. Thank God my kids are finishing college and I can give them all of my old knives, and my home kitchen can simply have the best.....
