Wusthof Classic 17cm Oriental Cooks Knife
I have had this knife a few months now and I love it, it is a great size, not too heavy and is very Versatile, I use it for cutting/chopping everything! (except bread) It has stayed sharp and the hollow edge helps stop things sticking to it when cutting. It is very expensive but I guess you get what you pay for. I also have Wüsthof CLASSIC Cook's knife - 4572 / 20 cm this knife is a little heavier but is also a great all-rounder.

Fantastically sharp and really well balanced
Excellent alternative to a classic kitchen knife. Fantastic for prepping and dicing vegetables. The bevel is narrower than a traditional knife which means it can also produce really fine slices. Nicely balanced so also easy to use for delicate work as well as big chopping jobs. Great knife.

Very nice knife if sharpened correctly
Good quality and very sharp knife. Be careful when sharpening as the blade needs sharpening at a different angle to other Wusthof knives. Most Wusthof knives need regular honing and occasional sharpening at a 15 degree angle. Wusthof Santoku knives need to be sharpened at a 10 degrees angle.

Very sharp, more durable than other similarly prices knives
Very good, I enjoy using this knife, i wish the handle was a little more comfortable and the divets extended a little higher as i find some vegetables sticking to the blade after cutting.

Brilliant knife
Been a chef 25 yrs and this is best Santoku I’ve used . Japanese are loosing there touch haha Light flexiable , great grip Amazing sharp edge Look after this and it’ll last many years

Wonderfully sharp knife
After looking around the internet for recommendations on which knife to buy I decided to go for this Wusthoff Santoku. I would have preferred a Japanese blade but they were outside of my budget. This was within my budget (just) and I had just bought the Wusthoff birds beak peeling knife, which I love, so I decided to buy it. I didn't realise knifes came this sharp, every other knife I have or used is blunt in comparison. With the thin blade and sharp edge it makes cutting, chopping and dicing a pleasure. I'm sure the Japanese knifes will be sharper but for the normal home cook this is more than adequate and yes both of my Wustoffs have tasted blood due to me being clumsy and not used to handling such a sharp knife. Now saving up for the cooks knife to add to the collection.

Great knife
When I first got the knife after going on research and reviews I thought I'd made a mistake as I wasnt keen on the rigid feel and manoverability. After a small break in period I love it! Clean thin slices and quickly! Would reccomend

Extreme care needed for a wonderful knife
Wonderfully sharp knife - the only reason I haven't given it 5 stars is because perhaps it is too sharp/effective - my wife and I both cut ourselves the very first time we used it (in spite of being careful) - glad we got the protective sleeve - it is now put away for occassional use (perhaps carving meat etc) - certainly don't want it where our children (although 17 years old) might use it - so a great knife in the right hands - not one for everyday use (certainly not after a glass of wine or if otherwise distracted

I have it for years now, used and abused, still sharpens easily, keeps the edge, cuts like a scalpel. This company rarely disappointed me!

Ricevuto e provato, ancora poche volte ma un prodotto di qualità lo si percepisce subito, ottima equilibratura con peso ben proporzionato, taglio perfetto e lama super affilata, mi auguro che nel tempo tenga l'affilatura ma credo di si. I bought the Wusthof Classic knife set in the late-1980s and am still using it today. It's as good as new. They didn't make a Santoku knife back then (or at least that I knew of) so I added this knife to my collection in 2012. It very quickly became my most used knife because it's SHARP and so easy to use. Flash forward to 2021 and I was washing the knife and due to my clumsiness it flew out of my hand and hit the tile floor in the kitchen on the handle end. The handle shattered and a chunk broke off. I wrote to Wusthof (online) about whether it might possibly be repaired, and instead they had me mail it to them and after evaluating it, despite the issue being nothing to do with their knife, they simply replaced it by notifying me I had a credit on their site (a credit that covered the knife and the shipping and tax all, except for 86 cents). So after nine years of use, and still my favorite knife, for 86 cents they quickly sent me a new one via the USPS. In 2012 these knives in the Classic range had a red sticker on the handle with the W logo on the sticker. You peeled it off. Now, 2021, the red W logo is part of the handle itself, not a square, but a red circle with a W in it. In all other ways it's exactly the same and still fantastically sharp. I've been using the Classic Wusthof knives since 1987 and they're still going. I can't imagine with quality and service like this ever being unhappy with them. You DO want to keep them out of the dishwasher, but they're so easy to wash with the swipe of a soapy sponge and then simply dry and put back in the block. Highly, highly recommended, with service that FAR exceeded my expectations when I was responsible for damaging one (which is hard to do, believe me).

Sin duda, el mejor cuchillo que ha pasado por mis manos. Es ligero pero muy bien equilibrado e increíblemente cómodo, el acero brilla de una forma preciosa y corta como una daga japonesa. ¿Sabéis eso que hacen los ninjas de cortar algo y que ni siquiera se muevan las dos mitades? Pues lo hice con un limón lanzado al aire: pensaba que había fallado y no. También corté un folio sujeto en el aire sólo con una mano. Increíble. Tengo un Arcos de la gama Tokyo que está muy bien, pero al lado de este... Quizá estéticamente es un poco alemán y le falta ese diseño arrebatador de los japoneses, pero ni siquiera eso me disgusta. Recomendadísimo.

Muy ligero. Lo he usado poco, no sé cuánto durará pero parece que la hoja es duradera.
