Truly the best steak knives I have ever used. Ensure you pruchase some wooden serving blocks to go with these to avoid ruining the blade. A++ but expensive !

I wanted a nice set of steak/meat cutting knives because it seems that our good set - while nice, didn't quite have the feel of a good knife. These are great! We have two very high-end chef's knives that are truly an experience to use - so sharp, good weight in the hand - for chopping/slicing, etc. I wanted something similar for steaks/meat. I tried one the other night on steak and it cuts through like butter and this wasn't a filet - it was a regular steak with some gristle. I haven't had that sensation with a steak knife even in the good steak restaurants. I picked a non-serrated blade because in researching knives, some prefer not tearing the meat which even the sharpest serrated knives will do. These weren't the most expensive and definitely not the cheapest but these will be our knives for many years so - good investment. You won't need any more steak knives if you get these. (side note - I keep these away from our daily knives so they are only used for meals with meat because I don't want to think about sharpening them soon... We use steak-sized knives as utility knives all day long - cutting fruit, veges, cooked meats - but not these. You could, of course, but we don't need this type of sharpness in our daily knives.)

These are by far the best steak knives I have ever used. And I have purchased so many brands and styles within different brands. I even prefer these over the Shun Premier version which are also excellent but are larger in the hand. These are non serrated. They cut everything effortlessly and leave a clean edge. I use these for cutting everything that I need to cut on a plate. From morning sunny side up eggs, vegetables, chicken, and of course steak. Does not tear the meat. Glides through and leaves the juices intact. Had them now for a year I think and use them every day. I hone them with a few passes on a sharpening steel every few months. And I've touched them up on sharpening stone 1 time so far. I've reviewed a number of Shun's in the past and these are par for the course. What I will say is that other brands like Messermeister (Avanta), and Chinese brands also make descent plain edge knives. But what I've found with the these Shun is that they hold their edge so much longer. And on a personal note they are perfectly balanced, "for my preference" in the hand at 65g Some people who may like a knife (or steak knife) with weight may find these to feel light (and unbalanced). That is personal preference.
