Olives love light , they will grow well indoor if kept near to window.

I think you'd have to be extraordinarily lucky! The tree is only tiny and they just stayed green on mine.

Complete beginner, how often should I water my olive tree?

It depends on where you and how you have planted your olive tree. If it is in a container then water when the surface of the soil is dry. when it is planted in open ground it shouldn't need your intervention after it has become established. Just think about the natural conditions that olives grow in, hot dry middle eastern areas of the Mediterranean. If in a pot then re-pot every other year in spring. Use a free draining soil mix.

How often to I water it considering I leave it indoors?

I am not sure how often, but I don't recommend keeping it indoors, or at least check and see how it is doing in the house. I kept mine in the kitchen in winter for a while, but soon the leaves began to fall. Maybe more than half of them were gone, I thought it was going to die. Now being outside, it is thriving beautifully.
