Q: Do they stay flat in the middle? The plastic ones sag in the center and when making leathers it puddles in the center.

These stainless trays are great for heavier loads and to support the silicone sheets for leathers. I made tomato leathers with them last year and they worked great. I bought them when I bought my dehydrator and have never used the flimsy ones that came with the dehydrator.

Q: what is the mesh size please 3/8” , 1/4” ? would like the 3/8”

I bought mine a year ago and use them in my Excalibur dehydrator. They are the 15x15inch. I don’t think they sent you the wrong ones.
