This is my second purchase of KNOW Rigatoni Pasta. My first bag was fine - The pasta was a nice alternative to brown rice or other pastas. This time when I opened the bag I noticed a horrible smell coming from the pasta. I'm not sure what chemicals they used to process this batch, but it smells nothing natural like the previous batch did. I'm still airing out my apartment, as I went ahead and cooked the pasta hoping that it might still be good, but when I tasted it - I'm not sure what they've done to change it. KNOW - please go back to your previous processing methodology as I will never purchase any of these products again as long as they have this chemical smell associated with them. Note: There was no tear in the bag whatsoever and it didn't looked tampered with in any way.

Pretty good, worth a try!
I was very curious about this product for a while and finally took a chance on it. I have tried some other gluten free pastas and you have to be careful with them or they turn to mush. Got the rolotini because they didnt have the elbows. Cooked only a cup of it in case I screwed it up, didnt want to ruin the whole bag. Wasnt sure if the 1/2 cup serving is cooked or uncooked, but doesnt absorb as much water as regular pasta so it didnt expand much. Mixed it up with a little mayo, a pouch of light tuna, parmasan cheese, salt and pepper. It was pretty tasty. I think with a little experimenting on the cooking time I could get the consistency of the noodles a little softer. Overall I would recommend trying it. On a side note, I have zero cooking ability. But im going to make it next time with some pasta sauce and also some one recommended baking it as well.

So how do I say this...I made this "pasta" with a chicken, garlic yummy sauce, the "pasta" looked great while I was cooking it but when I tasted it..what a shocker..really not good! The texture was okay almost like a whole wheat pasta but the after taste was gritty and not great. It wasn't so bad where I didn't eat my entire serving but that had to do with my sauce. The "pasta" is very filling which I thought was great! If you really need and want to trick your body into eating fake "pasta" then I think you can eventually get used to the taste but I have decided that when I want pasta I'm eating REAL pasta!

Tasty substitute, but not in its own
I haven’t had the turning-to-mush problem. I use these noodles exclusively with macaroni and cheese as a high protein substitute for my vegetarian picky eater. I mix it in half and half with regular macaroni noodles and no one has been the wiser. I agree that the noodles would not be great in their own, but masked with a sauce, they are fine!

I didn't realize this was made from chickpeas, which isn't *exactly* paleo. I don't really care about that aspect but this pasta causes a little digestive discomfort. I love other products from this brand and the texture of this pasta was fine, but I probably won't order it again.

Has a strange nutty flavor and mushy texture. I followed the package instructions but still isn’t near “al dente”.

For the price the quantity is very small and I mean small. Also had phosphorus in large quantities. Not a healthy item

Works for me
It's a good way to "feel" like you're eating pasta but you can definitely taste the difference between this and other GF pastas - even other chickpea pastas. But the nutritional value makes up for it so it depends on what's important to you.
