You'll want to wash both parts with a good degreasing dish soap
I bought this originally to chop salad for my button quail so they had greens that would fit in their tiny mouths. This did the trick without making the leaves mushy. It took a little practice to get the rhythm down, but once I figured it out, it was so much faster than taking out the food processor, chopping greens with that and then cleaning up everything. With the mezzaluna, I had only the knife and the cutting board to clean.As I was deciding on mezzalunas, what drew me to this one compared to others with similar ratings and prices, was the company's mission for eco-friendly efforts and the blade cover. The knife comes packaged simply, in a clear bag and a cardboard box, so very little packaging to get rid of and no extra knife block to purchase. Kudos!On arrival, there is some sort of oil on the blade and thus, in the blade cover. I'm assuming/hoping it's mineral oil to keep out moisture and prevent rust. You'll want to wash both parts with a good degreasing dish soap, not just the blade, before using. I recommend Costco's Kirkland brand eco-friendly dish soap. Depending on the water in your area, the soap might be on the alkaline side and leave that slimy residue on your hands like baking soda does. You can counter this by adding a little white vinegar to adjust to ph (about 1tsp give or take). I transfer it to an old dish soap bottle, rather than adding to the original bottle, and disperse vinegar in intermittently as I pour it in the bottle and rotate the closed bottle to mix.. It's comparable to Dawn, but I like the smell and the lower carbon footprint of Costco's better (Dawn is petroleum-based) since we're on this eco-wagon with the company selection already.Maintenance is easy. Follow the directions of drying immediately after washing, then sheath it to protect the blade and your hands. I've used mine several times already and it still looks new. No water spots or rust like some negative reviews have mentioned. It would be nice if that wasn't a risk, however, it does force me to put it away sooner!If you haven't used a mezzaluna before, I recommend looking up some videos on Youtube. Avoid the ones where the person is either rocking front/back (ergonomics, sheesh!) or using it to slice like a regular knife (just use a regular knife, and avoid holding a two handed blade with one hand). You'll want to use a left/right and diagonal rocking motion and a large cutting board. If you're starting with full leaves like kale, mustard greens, or romaine, go slow and do 2-3 rocks to cut the leaves down to size. Reposition the leaves in a pile and gradually increase speed as the pieces get smaller. For softer leaves like spinach, you'll want to maintain a good pile otherwise you'll just indent the leaves and not cut through. I think it's just the cell or fiber structure of spinach that does that. Once it's on a pile, it's fine.

It makes mincing stuff so easy!
I mince air fried chicken to mix with my dog's dry food. It used to take a while and it gets tiring chopping up chicken using a normal chef's knife. With a normal knife, I end up with a mixture of chunky and fine chicken. This allows my dog to pick and choose what she eats, and this leaves a lot of dry food at the end of her meal. With this knife, it is so easy! I can take my time as it does not get tiring, and the end product is so fine that my dog eats up everything! The chicken is minced so fine that she cannot pick and choose, and she eats everything!

Light and compact
First one lasted less than 30 days, but it kept a really sharp edge, but something went wrong in the interior of one handles. Sent it back for a refund. They sent another one for free. This company definitely stands by their product!

It’s sharp
So this is great. Does what it’s meant to. My only issue is the cover. I’m afraid to take it off because it’s so tight onto the knife that I’m afraid I’ll end up slicing myself.

Love This!
I originally bought this knife two years ago. It was misplaced and the kitchen was less fun, so I bought it again. This is a must have for the serious chef.I didn't realize just how much I used it,and came to depend upon it. Now I can't be without it. It's well made, solid throughout and very sharp. I don't think this one will disappear any time soon but if it did I'd buy another.

The best way to chop - but do not be fooled by the lookalikes
Chopping is way better than throwing your veggies in a food processor to chop. Sure it is easy and faster, but you loose the moister which is what you need for your favoring. Chopping with this does not take that much longer - definitely faster and safer than a simple knife. Give this a try, you won't regret it. I did buy another brand because it was cheaper, but quickly sent it back. Happy I found this brand.

Great knife for chopping.
Wanted one of these for a while. After reading reviews of the 2 bladed ones, I decided on the single blade. So glad I did that. This is so easy and comfortable to use, chops as rough or as finely as you decide. Easy to mince things finely and quickly such as jalapenos that you don't want to touch. Nice easy to use blade protector.
