Best intro to candy making kinda book- very informative with both basic and knowledgeable info. Been making candy for years and this still shed light on new ideas with new recipes. If you’ve been a baker or cook and wanna get into candy, this is a great resource.

Really helpful and informative
I paid $750 for an online Chocolatier Certification Class with a reputable chocolate school, and thus far I've learned more from this book. Very helpful, clear to understand and easy to use. Wish I would have just bought this and saved a lot of money.

Great book for beginners!
Easy to follow techniques and helpful photos make this a book to buy! I borrowed it on Kindle unlimited with a few others and ordered this one in a physical book for my collection. I've already made several sweets and they have turned out pretty good.

A Must Have for both beginners and seasoned candy makers
Those who want to perfect their candy making skills will want to pick up an excellent cookbook, The Beginner's Guide to Candy Making: Simple and Sweet Recipes for Chocolates, Caramels, Lollypops, Gummies, and More by Elizabeth LaBau. The cookbook includes information on ingredients, which the author insists on the highest quality (I agree with her when she says, “Please, don’t even think about using margarine in place of butter. It has a higher water content than butter, which can affect the behavior and texture of your candy, and more importantly, the taste is far inferior.”) which tells me that she really knows her stuff. The step-by-step photographs make up another excellent chapter on how to check the temperature of the candy and how it should look when it’s cooked to each stage. There is also good information on the equipment needed. One of the most difficult aspects of candy making is tempering the chocolate, and LaBau has given explicit instructions; very helpful.Not only are the first few chapters excellent, the variety of candy recipes included is amazing. There is something for everyone here. The recipes are written in the standard form which makes them easy to follow and leaves no doubt what to do for each step. The photographs of every recipe are beautiful and mouthwatering.While the title says this is for beginners, it is a cookbook that should be on the shelf of every person who wants to make good candy, whether beginning or advanced. There are enough recipes to keep anyone busy making candy for holidays as well as anytime just for fun. Do you have a sweet tooth?
Elizabeth LeBau is a food writer, recipe developer and enthusiastic candy eater whose "unapologetic love of candy" (p.6) might be a reason for her book "The Beginner's Guide to Candy Making. Simple and Sweet Recipes for Chocolates, Caramels, Lollypops, Gummies, and More", published by Quarto Publishing Group – Quarry (New Shoe Press). She states: "The basic thrill of simply eating sugar has been replaced by the joy of working with sugar to invent my own candy creations, and I hope to share this same joy with you" (p. 6) and she considers making candy at home a magical process. I really appreciated that she is also honest about having failures which is very encouraging for her readers but her goal is to help the readers not to make the same mistakes. The book is divided into three parts: 1) Getting Started, 2) Candy Recipes, and 3) Decoration & Presentation. It is very informative about the various ingredients and equipment. I highly appreciate that the book provides the temperatures in the various recipes in °F and °C. There are also troubleshooting sections throughout the book which help those who learn to make candy and those who want to deepen their skills. The book is fro experienced candy makers who are looking for new inspiration as well as for novices who want to learn how to get started. Excellent Candy Making Resource
To misuse an old cliché, "If you only own one candy making cookbook, make it this one!" I'm not kidding. This cookbook is more than just a collection of recipes, While it does have heaps of recipes, you'll also have a guide to candy making equipment, an overview of techniques, a collection of online resources, and a really fun section on finishing techniques and candy decorations that'll give your already sumptuous sweets some extra pizzazz.Because homemade candy can be quite fussy and temperamental, troubleshooting guides are included to help you figure out what might have gone wrong so you can try again with a better chance of success.The recipes run the gamut of traditional favorites through modern variations which use unexpected flavors and ingredients. There's something for everyone - and I can't seem to get over the fact that there's *three* recipes for lollipops! Will you choose to make Classic, Victorian-esque, or Quite Modern lollies? I want to make all three.I've not made candy very often in my life, but that may change soon.
