Sodium alginate is the sodium salt of alginic acid derived from brown seaweed. It is highly viscous purified product used as food additives. Alginate has an excellent functionality as thickening agent, gelling agent, emulsifier, stabilizer and texture improver. Easily soluble in water forming viscous solution. Widely used in molecular gastronomy.

Not worth it to buy
Cost high and woth nothing .it's absorbed moisture from atmosphere and gets wet slurry liquid. Cannot be used for molecular gastronomy specification

I tried making strawberry marmalade with this product and it was just too easy and perfect for the consistency.

The product is so good.
This is perfect for creating such vegan caviar and any other recipes too. I used it in my lassi recipe and it even gave it wonderful texture.
