Surprisingly sturdy

Best Gluten Free Alternative to Pasta
I have used gluten-free pasta, but I preferred the taste and texture of this product to anything else I've eaten. I can have gluten, and I'm switching anyway. My son's fiance cannot have gluten, and I made a lasagna for her using these as an alternative, and she was pleased. I hope these remain available. They have a mild flavor, great texture, and are slightly salty. All these things mean you don't have to boil them first with salt.

I love heart of palm pasta, but Palmsticcio falls short.
Heart of Palm Lasagna has been a keto lifesaver for me. I can make a batch in a 9x13 baking pan and have almost a week's worth of dinners lined up. Normally I use a different brand, and the lasagna turns out amazing every time, but I decided I'd give Palmsticcio a try and see how they'd turn out.The short answer is: not well.I had a few leftover Palmini Lasagna noodles in the freezer that I thawed out, and opened a can of the Palmsticcio to supplement them. I immediately noticed a clear difference between the two: the Palmsticcio was mushy, discolored, and cut in uneven segments. By comparison, the Palmini noodles were firm from the can before, and thawed out in better condition than the fresh Palmini here - as well, they were all uniform in shape and thickness.I thought this might be an issue with the can itself (I ordered a box of six, and two of the cans arrived dented with no physical damage to the boxes they were in), so I opened a second can and ... the same thing. Mushy, fall-apart "noodles" that I was afraid wouldn't support my lasagna.Some of the "noodles" were passable, and between both cans I opened, I had enough to make my lasagna tonight, but this is the one and only time I'll be buying this brand, and I suggest others looking for Heart of Palm pasta alternatives avoid them as well. The quality and QA behind the brand just doesn't hold up. Literally. The half of my lasagna using Palmsticcio wound up lasagna soup on the plate, but the other brand was firm enough to hold up the layers while still being soft enough to cut through easily for bites.Skip the Palmsticcio and try their competitors instead.EDIT: After opening the remaining four cans, I had enough usable (ie, not mushy and already falling apart when you try to pick them up) "noodles" to make one other lasagna. For the same price I could have gotten a much better brand and more usable noodles. Steer clear.

Good noodle substitute
It’s not perfect as a replacement for a lasagna pasta noodle. Of course I would prefer pasta, but this fills that void on a keto plan. Easy to use. Plenty for a small keto lasagna in one can. IANI (I am not Italian), but maybe in a past life. I visited Capri and Pompeii once. I watched The Godfather series and also Goodfellas. Sophia Loren is one of the most beautiful women I have seen in a movie too. You youngins Google her. All related to Italy, or Sicily, I think.

Okay if you don’t need all six cans
The cans are easily dented causing the seals to open in transit. I had two cans open, box was wet on the inside .

Not bad… but some issues in the manufacturing.
First, let me say, these are pretty good once prepped properly and made into a lasagna. Taste is not bad. Texture is a bit rougher snd stringy-er than the Palmini brand. They’re tiny cans with not a ton in them so you will need 3 cans for an 8x8 casserole dish of lasagna.As others have mentioned, the cans all came severely dented. I mean VERY dented… and not from the shipping. They were very well packed in a branded, divided box, then shipped from Amazon in an Amazon box. So the denting was that way before they were even packaged at the manufacturer. Very poor.
