Are these stained or coated? If so, with what?

Hello, it's no stained. this product just colored with thin natural paint。

Why does the paint come off? Is is food grade?

My son in law is a chef and I sent these to him. He lived in SE in Asia cooking. All I can say is that he likes them. He has not mentioned troubles of any kind with these.

Must one have extra-long arms to use these to eat with?

These chopsticks are not for eating. I personally use them for cooking, and sometimes to serve.
