They are definitely sturdy enough for piping heavier pastry such as choux! The 21" bags will most likely be the better size for you. The 12" bags are ideal for smaller baking or decorating projects, comfortably holding approximately 1 to 1.5 Cups filling. Q: Are these bags home compostable?

I wouldn’t put it in my backyard compost (but also haven’t tried to see how well it breaks down in that environment), but they can go in the city’s clean green bins (commercially compostable) for sure!
