Once sprayed on, will this help wash off dirt,snow,mud after off roading? Planing to use this on my trucks undercarriage, help in prevention?

I can tell you that it provide corrosion control, penetration, metal wetting and water displacement. It is not specified to help with the mud or snow removal.

Label says it can make rubber swell? Anyone have this issue? I was going to spray on everything all rubber suspension parts? including

Only if the rubber is really soft. Such as CV axle boots on some car manufacturers. But it is designed to be sprayed it underneath almost on everything.

can you use this to detail engine parts and engine? do you have anything alike?

This is a lanolin-based, non-drying lubricant, not a cleaner or polish. If you use it to detail engine parts, they will attract dirt like a magnet.

Can i use this after I sand and hen paint over it on the trim of my car? Also can I use it on the undercarriages?

You can. I have used this product over urethane and enamels. There will be some discoloration, but works well as a rust preventative. Yes to the undercarriages too.
