I've been reading up on sponge & chiffon cake chemistry and found out emulsifier is a secret ingredient to make the cake fluffy. I made a Japanese cake and saw potential for improvement so I decided to order this to try the recipe again. It's not cheap for sure but at least it's in a small container so I don't have to deal with a 15lb tub from another online retailer. In comparing the cake with vs. without emulsifier, the former has more pronounced holes and thus felt "spongier" whereas the cake without emulsifier looked more collapsed in the middle. I guess this product works! So if you want to experiment with cakes, I recommend trying this brand.UPDATE: I tried to use this after 6 months in the fridge and I found it doesn't work as well as when newly opened. I guess that's the shelf-life for this product?
