are the grips latex free?

I am sure they are because I am allergic to latex and I've used these pens for years with no problem.

Why do these pens dry up so fast?

This is a question that is often asked. First, all gel pen ink gets used at a faster rate than a traditional ballpoint. The reason is that a gel pen lays down more ink on the paper than a ballpoint due to the lower viscosity of the ink. So obviously if you lay down more ink you are going to use the ink faster. The next variable is the size of the refill. From a design perspective the pen can be designed around the refill or the pen can be designed to fit a shape preferred by the consumer. The G-301 is a consumer preferred shape and so the refill was then developed to fit within the barrel of the pen. In some cases that means a smaller refill with a smaller amount of ink; in other cases a larger refill with larger ink. Finally, there is a component of science to get the right performance of the ink in the right size refill. Perhaps more than you wanted for an answer, but perhaps helpful just the same.

Are these airplane proof?

A good question, I would think so due to the fact that the airplane is safe for humans!
