Non gmo potatoes? Organic?

On 1/27/20 I emailed Bob's Red Mill and asked if the 25 lb. bag of Instant Mashed Potato Flakes contained NON-GMO potato. The next day, a Customer Service Rep. named Bonita replied, "Thank you for your questions and your interest in our products. We only have the one kind of potato flakes and they are made from non-gmo Idaho russet potatoes. They are not certified organic. Thank you for your time. have a good day."

Is this product gluten free?

The only ingredients are dehydrated potato’s making it gluten free.

Can I put this in the refrigerator?

The package comes with its own zip lock bag, so I just keep it zipped in the original bag in my pantry. There is no need to refrigerate, and no reason at all to do so. We like the potato flakes but don't eat mashed potatoes very often, so I store it in the pantry and just use intermittently - it has kept very well for months in the pantry.

Are these made from whole potatoes?

In addition to information on Bob's Red Mill site, which states that they are made from real russet potatoes, I found this description later on Amazon: Bob's Red Mill Potato Flakes can save dinner when you're in a pinch! Made from 100% potatoes with no additives or preservatives, these potato flakes are great for whipping up a side dish or potato soup in no time. Prepare on the stove or in the microwave following the simple instructions on the back of the bag. Potato flakes have many other applications as well: use them as breading on fish, chicken, or pork; add to meatloaf or meatballs; use to thicken sauces or gravy; and add to bread recipes calling for instant mashed potatoes. The only fault I found with these (and other instant potato varieties) was that when adding the amount of liquid called for in the directions, the potatoes had a thinner, custard-like consistency. When I make them, I add more potatoes or a little of a less expensive brand, like Betty Crocker 100% instant potatoes to thicken up the mixture so that they have a thicker consistence, and taste much more like mashed potatoes made from scratch.
