Whole grain barley
This barley is not pearled, hence far more nutritious than pearled barley. It takes much longer to cook and is so worthwhile regardless.I make a mushroom barley soup that is delicious and hearty. A hard to find product so do get it from Amazon.

I like the big size grain, not like the dinky pearled barley sold in most stores now. Cooks up great and is perfect for stews and soups.

Organic foods taste sooo much better. Could not get our usual orgznic barley for a while. Found this. Wow! What a difference. Also no pesticides or hebicide to harm your body or enviornment.

Crunchy
Very crunchy. Probably best to cook it at least partially. Having said that, I generally added a tablespoon or two raw to my breakfast cereal. Good source of fiber.

Great in Soup
This is the only healthy complex carbohydrate I can eat that doesn't raise my blood sugar dramatically. I can't say I love it as a side dish like brown rice or for breakfast like oatmeal, but I do like to add it to beef-based soup. It takes a full hour to cook, but if you make it ahead of time, it will keep so you can add it as you go. A little goes a long way!
