Does the picklemeister accelerate the fermentation process? Paperwork with order says 4-5 days to complete. I saw online 1 month for full probiotics.

4 to 5 days make for a light, clean kraut. 30 days is fuller, funkier, comolex and loaded with probiotics.

Is the plastic cap BPA free?

Not sure but it shouldn't really matter the product you're fermenting shouldn't reach the lid

Can you ferment grains such as rice using this jar?

If to ferment grains is the same as vegetables then yes ... I don't see a specific problem that would arise .... but never did grains in it

I already have a 1 gallon picklemeister and I need a new silicon gasket for the lid. Where can I purchase replacement parts?

Picklemeister website. I bought a bunch of them so I can turn my plastic mason jar lids into Pickelmeister lids. They're pretty cheap too.
