Would this be good on sanded oak desk? Will it need primer to prevent uneven absorption due to different pore size?

Danish oil is a great product I have used it for years. The natural finish looks great on Oak. You should follow the directions carefully. All the old finish must be removed from the wood. If the wood was not previously finished it will go on smooth without any primer. Flood the surface of the wood and allow it to stand for 20 min. then wipe off the excess. Then repeat this process. It soaks in at different rates. I like to keep going over it to ensure that all the wood is equally moist during the 20 min period. When you wipe off the excess wipe it down good so that all the finish looks even. Let dry overnight before handling and you will have a beautiful streak free oil finish. If you let the wood dry for 72 hours you can then put a lacquer or polyurethane finish over the oil.

Picture shows natural as the color but the description says golden oak. Which one is it?

I am planning on using this on a guitar fingerboard made of ebony (black wood), but I think the wood is stained. Will this oil work on stained wood?

Ebony and black wood are very different woods. African Blackwood is in the rosewood family and loaded with natural oils. Ebony typically has less natural oil. Both are very fun to work with my favorite the rosewood family as it doesn't splinter and machines easier for me. I have used watco on both. Due to the density of both the watco doesn't penetrate much but it should work fine. Try light sanding with 320 or finer grit to see if stain comes off as again due to density of the wood it is likely the stain doesn't go very deep. Try and keep to very fine sandpaper to avoid scratching.

What does lo voc mean?

Low "volatile organic compounds" Roughly translated its low amount of potentially harmful vapor from being emitted.

Watco Danish oil

That Danish oil is available in Black Walnut is amazing. Use a stain, then reinforce it with the oil. I refinished baseboards, paneling, and did a new chai rail using it, and another stain. I prefer Danish oil over a polyurethane, because it makes a smooth surface that is less prone to casual water, or cold cup damage. also easy to repair a small are. The can it's sent in sucks. The child safe lid refused to grip. I had to dismantle it in order to get to a small metal lid to open the product. The nose or pour opening is not long enough to allow for a smooth pour into a stain rag. Needs a differnt lid, and a new can... the product inside was fine.

So far so good!

I can't speak for the longevity of this product (yet) but it looks stunning on my teak patio furniture! I bought it used and it had been stained with deck stain (no!!). I power washed and sanded most of it off but some just wouldn't budge. The dark walnut Danish oil gave the old teak a beautiful color and is dark enough to help hide the blemishes and remaining old stain. I did two coats and it went on easy and absorbed quickly. We will keep them on a covered porch so I expect them to be beautiful for years. The dark walnut was a medium thickness liquid that went on easy - very forgiving application.

Must try on eastern cedar!!!!

Used this on some eastern red cedar.... wow!!!! Super easy to use. Will see how well it does in a kitchen setting.
