Organic, Simple, Healthy, and Great Tasting
I have been using this pasta for many years. It is a Canadian product, so I stockpiled it before the tariffs hit. It is made from organic chickpea and yellow pea flour. It provides fiber and a relatively high protein content. The main thing is the texture and taste. Before heating the water, I put just a teaspoon of avocado oil, salt, and black pepper. When it is finished, it smells like something boiled in chicken broth. The taste, right out of the pot, is good. Occasionally, I will add some cheddar cheese powder and cayenne pepper and eat it as a snack. It maintains its texture very well, and cook time can be varied to suit your preference for texture. This stuff is just great!

Just a few healthy ingredients
These noodles have turned out some really good lasagna. Some of the gluten free options are made with unhealthy ingredients. Chickapea has only organic and only necessary ingredients, no junk fillers. It was a good value and cooked the same as 'traditional' lasagna. The noodles held up well and cook time was the same as other lasagna. I also tried it in a lasagna slow cooker, with somewhat less favorable results, possible because that is a moist cook method. The noodles were less firm when cooked that way. High protein, some fiber and organic; can't beat that!

Noodles held up perfectly through shipping, cooking, and eating
Worried about the noodles breaking in transit, I gently shook the box after it arrived and heard an ominous rattle rattle. But when I opened the box I realized that was just the perfectly whole noodles shifting in their boxes. I just made a vegan lasagna with the noodles, cashew ricotta, zucchini, onions, spinach, and sauce, and it was quite delicious. I stuck to the cooking time (35 covered, 10 uncovered, plus time to rest and cool) and the lasagna turned out perfect! The noodles held up enough to be cut and served in a perfect square. The flavor and texture of the cooked noodles was spot on. Excited to try the leftovers tomorrow. So happy with this purchase.

Changed the Ingredients!!
This used to be made from just chickpea flour. Now the main ingredient is PEA flour. How can they still call themselves Chickpea brand. It is misleading in my opinion. We have bought their products for years but are done with them and will buy Whole Foods brand organic chickpea pasta instead. We have found that it tastes just as good or better. I am donating the rest of the Chickpea brand pasta we have to a food pantry. Pea flour is not healthy based on my research.

Great Product
my wife was recently diagnosed with an allergy to wheat and corn however loves pasta. This was our first attempt of using this product and it taste great and is so healthy for her.
