what is the difference between this reumbent bike from spirit and the one for $1398.50?

On the more expensive bike, you can adjust the tilt on the back of the seat. I have the XBR25 (unadjustable tilt) and have found it to be very comfortable.

It depends on you leg length but it would be very close. I recommend finding a showroom near you that has one and trying it first.

how do I shut it off without uplugging it?

Can go into sleep mode by pressing “start” “stop” and “enter” buttons at same time getting into Engineering Mode Menu. Use “Level Down Arrow to select Display Mode. Press “Enter”. Use “Level Up” or “Level Down” button to change On to Off. Press “Enter”. Press “Stop” to exit Engineering Mode Menu. Thereafter, when unit goes 30 minutes without activity it goes to sleep. Wakes up when any button pushed.
