No, I wouldn't; the gaps are too big to keep germs & insects out. Use fine muslin or cheese cloth.

Dose the heat pass through the mesh

Yes it does as the mesh is peforated, i dry all my fruits and herbs on the mesh and they are brilliant ,especially for wetter fruits such as banana and mango, it peels off so easy

Can these be used for dehydrating food in the oven?

I wouldn’t trust it not to melt at higher temperatures. Works fine up to 75 in our dehydrator though and that’s not all that different in design from an oven really just more airflow.
