And brings the tang I used to get with tomatoes. I'm not sure if I have always been sensitive to tomatoes, but during an elimination diet I discovered that nightshades (tomatoes, white potatoes, peppers, eggplant) cause me inflammation. I use a this as a replacement for tomato paste. It brings the tang and depth needed. It's saltier than tomato paste, so I don't use it one-for-one, but taste as I go.
