The Lime flavour dominates and doesn’t work
The idea of the cheese was intriguing - and I normally enjoy all three flavours. As you would expect from this gifted cheese maker, it is well made, with a full-flavoured cheddar-style texture. The spiciness of the chilli is fine, but the cheese is rendered almost inedible due to the artificial-tasting lime flavour, which is not only astringent, but really dissonant with the other flavours of the cheese. A disappointment.
