What are the ingredients?

The ingredients are in Italian and I don't know what they actually are. I researched the company's website am very impressed. Yhe flavor of the yeast is wonderful and my bread is wonderful. This is the only yeast that I use.

Why does the yeast need an emulsify add to it?

It doesn’t. Just add the yeast to your flour. I use this all the time to make homemade pizza

does this require activation or can i mix it directly into flour

You can either mix directly into flour, or mix with 1/4 cup barely lukewarm water and a little sugar in a small bowl, and let it proof first. Takes about 20minutes or so. I do the proof method, but you don't have to. One tip here, if you add the yeast directly to the flour, don't dump the salt on top of the yeast since salt can inhibit good yeast growth. Just mix the yeast into the flour on one side of bowl and add the salt to the other side of bowl. Also do not use chlorinated tap water...also bad for yeast growth. Happy baking!
