The output matches the monitor; which monitor? i will input a laptop hdmi out to 2 different switchers; 1 via hdmi 1 via sdi.

"Output supports EDID of the monitor". https://en.wikipedia.org/wiki/Extended_Display_Identification_Data This simply means that the converter does not output a fixed format via HDMI, rather it will communicate with the connected display to handshake on what resolution the monitor prefers. If your outputs are going direct to switchers and not to a display/TV, then this should not affect you and converter will simply output what you set it up to do.

Will this converter let me use my iphone camera or apple tablet camera into atem mini switcher?

Im not sure because the mini switcher allows you to switch video outputs during streaming. The UpDownCross use one signal and let you distribute that signal through the sdi out and hdmi out..
