Deep and mellow with rich shallot flavor, use when browning meat, to flavor steaks and saute' mushrooms; drizzle on fresh asparagus, sliced carrots or broccoli with a little parmesan cheese and bake at 225 degrees until the veggies are tender. Drizzle on pasta and veggies, use as the base oil for stir frying anything and everything.
