This cheese was fantastic! I made 10lb of homemade smoked cheddar jalapeno sausage and used this cheese for my recipe. It was the perfect size for my hog casing sized brats and it held together great while mixing and stuffing the meat. It melted once I grilled the sausage for consumption, but not before. This bag makes a lot of sausage, espcially if you go with a 10% cheese to meat ratio like I do. Placed it in the fridge and it should last for a year (or until my next batch). I would recommend this cheese.

This cheese was great. It's a little pricey but if your primary concern is quality... get the cheese! I used it in a jalapeno Polish kielbasa and it was one of the best sausage products I've ever made. It held up and the smoke perfectly.

Cheese was delicious!I used it in my jlepeno summer sausage,and my cracked-black pepper & garlic summer sausage.Both were kits from Hi-Mountain seasonings.The cheese worked great with them,and after I smoked them on the smoker,the cheese was still in shape perfectly.2 very good combinations.Hi Mountain seasonings and (the cheese)from The Bearded Butcher.

Very good quality high temp cheese I used for a 10lb batch of breakfast sausage. Stays together through the mixing and stuffing process and melts just enough to make the finished sausage really good. Try this cheese!!
