This KITCHENDAO slicer fills the bill very nicely. I chose the stainless steel version to make it very easy to clean and light in comparison to the marble or wooden based varieties. The cutting wire is thin but strong and easily slices through even hard cheeses. The slicer comes fully assembled but it comes with two replacement wires. I haven't had to replace the wire yet but it looks very easy to change and adjust. Since I received the KITCHENDAO slicer I have used and cleaned it daily. It cuts cleanly and is a breeze to clean with just a little soap and water then I let it air dry. I use it so often that it is more convenient to hand wash rather than machine wash but it looks like it would be fine in a dishwasher. I wash the slicer promptly after using since the cheese will dry and harden on the cutting wire which makes it more complicated to clean it properly.
