If you go to eichlers site they have a sizing chart that I've used in the past to determine sizing for my son and husband.

Q: Are the tzitzit strings wool or polyester? Are they placed and tied by hand?

The strings are wool and are tied by hand in order for it to be kosher.

Q: Do these contain a blue thread as Torah commands?

No And it’s not known today what is the real blue so white threads are fine
