The Hack to the Party Favorite Mac and Cheese
First, this was a good price for a testing sized bag of sodium citrate. I've been able to make 3 party sized mac and cheeses (2lb of pasta) out of it with some to spare. Second, if you want to have a great tasting mac and cheese that stays smooth and melty, you have to go the molecular gastronomy route with some of this stuff. I've done roux based mac and cheeses successfully in the past, but the pitfall of them is they can lack some of that cheesy punch. With sodium citrate, there are no compromises! You also can be as creative as you want with the combo of cheeses. My only tip is to use an immersion blender and add the cheese slowly.

Great for making a smooth cheese sauce that holds up to reheating
We use this sodium citrate at work and it has become one of those ingredients that quietly solves a lot of problems. If you have ever tried to melt sharp cheddar into a sauce without it breaking or becoming grainy, this is the fix. A little sodium citrate lets the cheese melt smoothly and stay that way, even after cooling and reheating. The powder dissolves easily in warm water and does not add much flavor on its own. What it really does is let the cheese take center stage. It is especially helpful when you are working with sharper cheeses that normally want to separate. Here is the simple approach we use. Warm a small amount of water on the stove, stir in a spoon of sodium citrate until it disappears, then slowly add grated sharp cheddar while stirring. The cheese melts into the water and turns into a silky sauce in a minute or two. You can adjust how thick it gets by adding a little more water or a little more cheese. It stays smooth and does not turn oily when you heat it again the next day. For anyone who cooks a lot or wants a reliable cheese sauce for nachos, pasta, vegetables, or a sandwich shop, this is worth keeping in the pantry. Fantastic, inexpensive way to add sodium citrate to sports drinks so that the osmolality of the beverage doesn't get as high as if table salt were used for an equivalent amount of sodium. Add table sugar, dextrose, fructose, or maltodextrin, or some combo of any/all to your sports drink for a lighter flavored sports drink with more optimal contents for performance in events lasting longer than 2 hours. Package is sturdy. Easy to open, close, reopen, re-close, etc.

Cheap sodium citrate
Sodium citrate has become a must have ingredient in our house since having a child. Easy mac with whatever cheese we might have on hand is great convenience food. This brand is about a cheap as Iโve seen without buying obscene amounts.

This works!
I wanted to try making a smooth cheddar cheese sauce, but didn't need a giant bag of sodium citrate just to try it out. This small size is cheap and not a huge waste if I had to toss it out. Pleased to say that this worked nicely to create a smooth cheese sauce/dip. I've seen various instructions for the ratio of sodium citrate to cheese + Liquid amount from 2 to 4% but 2% worked fine for me. I would error on the side of too little and add more if needed as this does add additional salt
