As a do it your self person, I appreciate the days when people learned from previous generations how to live independently from the now days corporate reliance on products to achieve a high quality product, (In this case cheese making). He teach how to work around the use of expensive corporate culture by teaching how to make your own. He talks about the controversies around rennet & a variety of ways to produce it yourself. He goes through the subject matter in depth about everything you'll need to know to make cheese & milk products without having to rely on corporate anything! This book is everything I'm about! Self reliance! Thank you to a much needed resource!
