What is the depth of the skimmer part?

Not very. It's about an inch deep.

A question for the wire skimmer (the one with smooth circles) - is it deep enough to get something larger like fried chicken with good control?

I think so. I use it to lift out large chicken thighs cooking in a large pot and it works very well.

Are all their products really made in china??? i thought it was germany but they did the good ol "engineered in germany" (but made in china...) muhaha

Sadly, I believe that most of their products are. However, a few months ago I purchased their food mill which is still made in Germany.
