PEAK dehydrator
After 7 months of using it for making fruit leathers, leavening bread, drying beans and spices, reviving stale peanuts, drying whole and sliced fruits, topping my cookies off, or just for fast drying itself after a rinse, I decided it's about time to give this monster a fair veredict. It's without a doubt a gorgeous box and the countdown interface is very pretty, let's start from there. It's also very quiet so you can overlap it with your daily frenzy or leave it on overnight, which I happen to do a lot. For the 6 tray model, 9.6sqf of drying surface is basically a whole dining table and you can easily fit 14 pounds of fruit puree for leathers inside. One great bit you don't get to see until you actually have it in front of you is that the glass door panel has some inbuilt rails that let you slide it underneath the body. So no risks of bumping on it while you walk around and load or unload your machine. We were able to measure its power consumption and it only reaches the theoretical 700W very briefly. The actual average was around 125W/h so your electric bill won't be a concern at all, so another huge thumbs up. Also the recipe booklet (digital, not physical) is extremely thorough and allows you to plan your stuff carefully even under specific environmental humidity conditions. Probably the only criticism I'd have towards it is that they haven't yet localized the Performance series onto 220v, so if you're an international buyer like me you'll need a transformer and save some extra budget. But it's worth every penny. Yes, go for it, you may stop reading.

Makes me happy
Huge upgrade from my old dehydrators. I’ve wanted one of these for a long time. Finally got one. I’m very happy with this, seems to dehydrate and evenly. I also love the glass do you can see what it looks like.

It works great!
I’ve only had this a couple days so far but I’ve dehydrated some strawberries and some meat. It works great! Easy to use with the touch controls on the front panel. Set the temp, set the time, and away you go. Cleaning it out is easy, too. The trays are easy to clean by hand. I use a damp cloth to wipe down the inside and bingo… clean for another use. I just bought some pineapples and a bunch of apples. Those are going in this evening. I’ll be sure to update this review as the months go on. So far I’m really happy with this purchase! Update 9/16/2024: It continues to perform flawlessly! Apples and pineapples taste amazing after dehydrating. I've also made more beef jerky and I'm still working on the flavors but the meat comes out perfectly. About to head to the store to get some supplies to give fruit leather a try.

Stick with the older version
This is my second Excalibur dehydrator. I went with the performance series model due to promises of faster drying due with new technology. What a disappointment! I am dehydrating the exact foods I have dried successfully for years, in the exact same quantities. With the performance series dehydrator, the food at the center of the trays stays or becomes extremely wet and ultimately grows mold. I've thrown out several batches of food due to the lack of adequate air circulation. I even cranked up the temperature but nothing works. At this point, I plan to dig out, clean up, and repair my old non-performance series Excalibur dehydrator so I don't have to throw so much food away in the future. I have recommended Excalibur dehydrators for many years. Now my recommendation will be to do whatever is necessary to find or maintain the older model because the new performance series doesn't dehydrate at all.

Good for jerky, but “new” wasn't actually new…twice
Works well for jerky, but there are some real caveats here. I’ve now bought this twice, from two completely different sellers (one Amazon, one not), and in both cases it was sold as new by Excalibur. Both boxes looked totally factory fresh when they showed up. But once I opened them, different story. Each time the packaging had clearly been opened and resealed, the inner foam had cuts in it, and the units had signs of use. Things like grease streaks on the glass, fingerprints all over, a small dent, missing pieces. Not subtle stuff. This lines up with what I’m starting to see others mention too. Feels like returns are getting cleaned up and sent back out as “new.” If that’s what’s happening, just say that Excalibur. I might actually be fine with some level of refurb or parts reuse, but don’t send something that’s obviously been opened/used and call it brand new (along with a "brand new" price). It just feels off. I returned the first one, and after the second identical experience, I’m done with the brand. A few other things: -The “dual temp” process in the instructions (run at one temp, then switch) didn’t work on either unit. Either the instructions are wrong or the feature doesn’t actually work -Fan behavior was inconsistent. First unit ran nonstop. Second one paused the fan every ~20 seconds for a second. The paperwork said that was a “feature,” but the first unit didn’t do it at all, so who knows -It does dry jerky really well. Fast and even -It also pulls a lot of power. The heating element seems to run almost constantly, probably because it vents a lot of hot air to keep humidity down Bottom line: it works, but go in expecting something that might not actually be new, even if it’s sold that way.

Dehydrating Garden Vegetables
I like the top window so I can see how dry the vegetables are before opening the door. I also like the front door for the same reason. The drop-down slide in door is nice. I can slide it in, out of the way or leave it out to help catch any falling dried vegetables. Setting the temperature and timing is very easy. I used it so far to dry my sliced onions 1st and it worked great. I hand crumbled them and put them in dark 1/2-gallon jars. I did set the temperature about 5 degrees higher than what the book called for in order to get them crispy dry. The lower temp leaves them leathery dry. Following online directions of blanching first. I dried my garden-fresh sliced potatoes and squash too. So far, I am completely satisfied with my Excalibur dehydrator. UPDATE: 8/15/25 This morning we had it running 8hours but came home it was off. The power panel isn't working on it. NO lights at all, nothing.

Best dehydrator in it's price class!
We run two of these almost 20 hours a day in peak season when we are dehydrating mushrooms and herbs. Quiet, easy to use and very efficient! Fantastic product and well worth the money! Avoid wasting your $$ on other dehydrators!

Power hungry but great machine.
I bought this machine primarily for baking old audio tapes. Old tapes glue, that holds the iron particles on the plastic tape tends to deter over time. Is it sound becomes dull and sometimes the tapes starts screeching over the tone hat. Baking the tapes at a specific temperature for a specific time can remedy this problem off old tapes. So, is this is quite a sensitive undertaking, and this dehydrator that's a perfect job. I also dehydrate apple slices in the fall with it. I could not imagine it's getting any better.

Great for healthy snacks for us ad the dog.
Great machine! When you think you have too much stuff to fit, you end up with space to spare. We are still learning but so far we’ve done strawberries, mango, banana, soup mix, beef jerky, sweet potato. We’ve use the fruit as toppers for my dogs raw diet as well.

Amazing
Works great and is very easy to use. The screen is intuitive and makes it easy to understand how long the product has been drying for. It’s quite sturdy as well. The racks were easy to clean too

It does the job well, make sure you check things out from the Top Glass.
I like the Top Glass where you can view how your food is dehydrating. It is easy to clean and it does the job. Each food will take longer or less time to dehydrate depending on how thin you slice your food. Now I would never ever leave an oven or dehydrator unattended by that, I mean I would never leave the house. It is always better to be safe than sorry. Our friend has one, he was happy, so my husband bought this one and we both like it. I tried bananas and it took too long, so it is cheaper to just buy them already dehydrated but other fruits, I am quite happy. But we mostly bought it, to make Beef Jerky and we love it.
